There’s a psychological shift to having access to more strings. It alters your perception of what a guitar is. With full access to both the upper and lower registers, you’re able to approach composition in a more holistic way with one instrument. You also have more options with regard to different timbres. The same note will sound different on different strings simply by virtue of string thickness.
I only recently got an 8 string and am super excited to explore it more. Conventionally the 8 string encapsulates the lower bass registers. But if you know my music, you’d know I’m somebody who loves combining super high and low ranges.
